1. Dany's getting to Dragonstone
2. Sandor, et. al. at the Farmhouse
3. The typical brother-sister between Jon and Sansa after the "formal" address to the Northerners by Jon -- [and Sansa basically telling LF off]
4. Euron in the throne room at KL (and I go back to that close up of his fleet, too - really stunning)
5. Bran's vision of the Army of the Undead en route to the Wall, so powerful
And a hearty honorable mention to Arya's scene with the Lannister soldiers. That just touched me, the reminder that there are 'good' people caught up in all of this and that the scene reminded me of those days long ago when Arya had Gendry and Hotpie for comrades.

I totally missed that I was supposed to do a top five because it says three in the op And I totally missed that the OP said 3! 1. Dany arriving on Dragonstone (DJAWADI ) Djawadi, YESSS! I just found out he did the music for Westworld, so that settles it, I'm starting that as soon as S7 is over! 5. Sam's growth from coward to determined. What a great thing to point out! Agreed!

Wow, tough decision but here we go:
1 - Dany arriving at Dragonstone. As with others who started with the books, I've waited a long time for her to set foot on Dragonstone again and the setting was brilliant. Clark played the silent role with just the right mixture of anticipation, love, excitement, and fear; and watching the dragons circling over the enormous castle was worth every day of the wait.
2 - The entire Winterfell scene from Lyanna Mormont to Jon and Sansa discussing Cersei. A brother and sister haranguing each other to make sure each is being heard. Sansa was right in many things, especially tell Jon he has to be smarter than Ned or Robb. The two of them are a highly effective team.
3 - Sansa and Littlefinger. So glad to see Sansa taking her own advice to heart. Only a fool trusts what Littlefinger says or does.
4 - The Frey Feast. The glamouring magic of the Faceless men is truly impressive, and David Bradley did an excellent job of playing the role. The change in the speech pattern, the wide eyes matching Arya's large eyes was truly amazing. And finally we get "The North Remembers".
5 - Sandor and the Brotherhood. Of all the characters who are on a redemptive arc, I am enjoying the Hound's most of all. Rory McCann is amazing and his performance in this one hits right between the eyes. Imagine being brought face to face with the damage you'd done and how to attempt to make an atonement. Seeing him as the gravedigger was a call to us book readers, and I loved every moment. It does seem fitting that he fall in with fire worshipers. R'hilor claimed him when his brother held him to the flame as a child.
In fact, the only scene I didn't like was the poop montage at the Citadel and that's just a personal thing. It's apparent the rapid pacing is really going to give us a lot in a short time and I like it. I'm ready for the war to come.

David Bradley did an excellent job of playing the role. The change in the speech pattern, the wide eyes matching Arya's large eyes was truly amazing. Dan and Dave mentioned this in the 'Inside-the-episode' video about how they weren't originally going to put the Frey massacre as the cold open but when they watched David Bradley do a subtle shift in character to better match Arya they said they had to do it, it was too good to pass up. They knew the audience would know what's up from the start but still be a little confused until just before he starts to talk about how brave the men were for killing a woman and her unborn babe bit... that's where you can see Jon Bradley shift his looks and speech just a tiny bit and even Walder's wife is starting to look a little confused even before the men start choking and dying from the poison. There's a brilliant few seconds in there where you almost really believe this is someone else pretending to be Walder. The fact that this is still the same actor is great. He did a fantastic job of making it weird and awesome!

#1 Dany reaches Dragonstone...just as others have pointed out...us book readers have waited SO LONG for this moment. I really, really, REALLY, wanted it to come to me through GRRM's eyes first, but it was beautifully done. Did you catch that Emelia had her hands clenched into tight fists as she watched her dragons swoop around the castle? And how there was just the tiniest little lump in her throat as she swallowed down her tears? Beautiful. The music was masterful and the choice not to have dialog was perfect. How her companions stood back to let her have some privacy (well, Grey Worm had to be reminded, but it was still a reverent and emotional scene )
#2 Sandor as the Gravedigger. Rory gets my vote as best performance of the night. It was so beautiful and sorrowful as he shows compassion, tenderness and regret in the simple action of burying that family. Wondering, I'm sure, if his actions made a difference in their deaths. His redemption arc is in full swing and we see a side of him that the Hound never showed us. "The Hound is dead and Sandor Clegane is at peace." Thoros insists that he look in the flames (I think He knew what Sandor was going to see)Rory's face as he describes it...masterful!
#3 Arya and The Last Supper. I knew it was Arya 5 seconds in to the cold open...I told my hubby..."It's Arya!" He of course says...."where???" Then he goes....OOOOHHHHH!!! Realization dawns! I agree that the showrunners were probably much kinder to the Freys than GRRM will be. You don't hang a giant wolfpack on the wall and not use it...the book story has the Freys saying that the Stark's and bannermen all turned into wolves and attacked the peaceful Frey/Tully union...but this was awesome too. David Bradley did a fantastic job with subtle Arya hints. Well played!

Arya first scene (of course!!!), probably the best opening scene for the show so far, Dany homecoming scene and Lyanna Mormont (A LEGEND).
