On a completely different note, has the tagline "Only death can pay for Life" been used? I think it would make a good tagline for season 8. It's a great tagline. It weaves together a lot of the storylines as well since every major character has experienced that dynamic in one form or another even if not attributed to the Red God or the Faceless Men. If in the end of the story there's a great sacrifice to save mankind from the The Long Night and total destruction then it would definitely fill the bill for ultimate tagline. It also brings the story full circle back to the very beginning:

I think it's obvious that D&D either forgot about it or they wanted to make things easier for the audience. Or, and allow me a bit of speculation. But, what if the baby didn't die? Got your attention. What if D&D did something a little different. Will call it the Flea Bottom Flip. What if they borrowed something from the FAegon plot? Why is Gendry still floating around? What if Varys abducted the baby and replaced it with one that had died? Gendry would be about the right age, a boy black hair and the only survivor. Of course he does not have to be, but it could be a sort of FAegon style plot, raised humble. Probably not, and he is probably around because they need a Baratheon to survive. Maybe his real name is Edric Baratheon, the women who Varys paid to raise him probably called him Gendry. It could be done. Sure it's a bit of a plot hole but that never stopped D&D.

The process did not look all that complicated on the show either, remove guard, melt, poor. Now I don't know if it even matters if he learned or didn't learn. Because you can always dump a manual in Sam's lap at the Citadel or even the wall library if you needed too. It would be better to know how to forge new blades than to reforge from a limited and finite source. Though there are some oddities, like you don't need anything special to kill a Wight or destroy it really, that much we have seen on the show and you can kill an other with Obsidian and Dragonstone has more than enough of that. But I was thinking that they like Lena a whole lot and they could bring her story all the way back to the beginning. Come full circle, after all that is one of the first things she relates to the viewers and it allows them to mix in some FAegon ideas. Gendry could also be a political tool to bring in the storm lands, or all of the above. Who knows it was just a thought.
